Taco Tuesday – GAPS Style

Taco Tuesday has always been a regular part of our weekly meal plan. (Seems a little funny to share our Tuesday dinner on a “What they Eat Wednesday” post! lol) Obviously, the girls can’t have tortillas or taco shells, but the beauty of tacos for dinner is that you can make the components and everyone can customize their meal according to taste or dietary restrictions. I also love this meal because it’s quick and easy to put together. I cook the ground beef in advance in my slow cooker, and then package it up for my freezer. When I have a recipe that calls for browning ground beef, that step is already done. For tacos, I simply put the meat (frozen or thawed) in a pan, add homemade chicken broth (another bonus is I’m able to get this healthy food into my whole family, even those of us not on GAPS) and add my homemade taco seasoning. For my girls I layered roasted butternut squash, taco meat, romaine lettuce, and avocado. I topped it with a spoonful of beet kraut so they would eat that first.

The girls had what you might call a GAPS Taco Bowl, while I had taco salad, and my husband had burritos.  My son made himself a soft taco with cucumber and carrots (pictured below.) And actually, his meal could be made entirely GAPS friendly. If eggs are tolerated, there are plenty of grain-free tortilla recipes. Some of them use cauliflower, which I’d like to try if/when my girls can tolerate eggs. When we transition to Full GAPS I am going to try making refried beans with white beans. And, if you can tolerate dairy, cheddar cheese is allowed on Full GAPS. I added sour cream to my taco salad, which is also allowed on Full GAPS, if you make it yourself. My son doesn’t like tomatoes and I haven’t tried the girls on them again, after my youngest had a reaction. But, for most people a taco is incomplete without salsa – so go ahead and add that too!

So, if you’re running out of dinner (or lunch) ideas for a new grain-free lifestyle, don’t forget that you can often modify tried and true favorites to fit within your dietary guidelines. Tacos are also great for serving when you have guests, because as I said above – you just set out all of the components and let everyone build their own. Enjoy!
