Zucchini Chips

This is a fun snack that I’ve been making for my toddlers on GAPS. We call them Zuke Chips and the girls love them! I have to admit, they are pretty tasty, and a healthy alternative to potato chips. I’ve seen quite a few recipes online, but these seem the simplest. Enjoy!

Zucchini Chips
 
A tasty and healthy alternative to potato chips!
Ingredients
  • Zucchini
  • Olive oil
  • Real kosher salt
Instructions
  1. Slice the zucchini thinly with a mandolin or food processor.
  2. Pat the slices dry with a paper towel.
  3. Toss zucchini in olive oil (or brush the tops after arranging them on baking sheets).
  4. Arrange zucchini slices on baking sheet lined with parchment paper, making sure they are not overlapping or touching.
  5. Sprinkle lightly with salt (be careful not to oversalt - the zucchini will shrink a lot, and you can always add more salt later.)
  6. Bake at 225 degrees for 3 hours, until crispy.

    Note: You may need to decrease the oven temp and/or increase the cooking time. Keep an eye on them to be sure they are not getting too dark. They should be crispy, not chewy, so increase the time if necessary.
